The weather in south Louisiana has been fantastic the last few days—ideal for grilling. I slapped a salmon fillet, drizzled with olive oil, a splash of fresh lemon juice, and seasoned with a little salt and pepper, on the grill together with mixed vegetable kabobs. Easy enough…

Thread cherry tomatoes, mushrooms, chunks of green and red bell peppers, radicchio, and chunks of fennel on skewers. Brush them with a bit of olive oil and season with salt and pepper. Then turn them a few times to cook evenly. Presto! Great meal!
