Using Leftovers

Because I had a chunk of lamb roast, a couple of grilled pork chops. and a link of smoked sausage left over from Easter dinner, I wanted to come up with some ideas for their use. Bingo, I thought of using them in a cassoulet. Easy enough.

Cassoulet is a classic French dish made by cooking white meats and various meats (sausage, pork, duck or goose), but I just “made do” with what I had on hand. I sauteed chopped onions, added a couple of cans of white beans, the meats, some chicken broth, seasoned it all with salt and cayenne, and voila, a quick and delicious supper to serve with crusty French bread and a salad of asparagus and spring salad greens.
