Australian Paperbark

Tea Tree oil, the intensely pungent essential oil that has been used to treat a variety of skin problems comes from the Australian paperbark tree. Now the tree provides more than an oil, its bark is being used for cooking.

According to BBC’s Good Food Restaurant Spy, the latest cookery “must-have” is bark from the paperbark tree. Currently the bark is being used at one of England’s 2 Michelin star restaurants for wrapping and roasting chicken. The flavor? “Subtle smokey.”
