Chill Out with Cool Food

It’s hot, hot hot, but you can stay cool, cool, cool by chilling out with food that’s served cold or at room temperature. There is no reason to heat up the kitchen, stand over a hot stove, or skimp on a meal in hot weather.

Summer meals should be enjoyable and leisurely. Do a little advance planning and shopping. Invite friends or family to join you for this repast that can be served in the cool of the evening when the heat of the day has waned. One note about the cold roasted chicken—bring it room temperature before carving to serve. Then serve it as is or with condiments such as mayonnaise kicked up with a bit of mashed garlic and hot sauce, or Dijon mustard, and assorted rolls.
