At the Beach House

When I’m lucky enough to be able to spend a few days, a week or even a longer period at the beach, what to eat is a major part of my getaway plan. I usually bring as along a casserole or two to pop in the oven, and the makings for sandwiches and salads, but I always try to set aside an evening to prepare a meal to enjoy while watching the sun take its westerly dip into the horizon on the ocean.

Most of my days are spent on the beach catching up on my reading, lolling around on the patio or balcony, or playing in the cool surf. But I also like to visit the local produce stands and seafood markets to find the fixings for a meal made with whatever I can find. For instance, I often find delicious locally grown vegetables or come across a market that offers fresh local seafood. Then it’s a matter of picking up a few things at the supermarket before I’m humming away in the kitchen with the sounds of crashing waves in the distance. Here are some ideas that might inspire you at your vacation spot.
