Nuoc Cham Sauce

  • Yield: About 1 1/4 cups

Ingredients

  • 2 small garlic cloves, minced or crushed
  • 1 small fresh red chile pepper, seeded and minced
  • 2 1/2 tablespoons sugar
  • 2 tablespoons fresh lime juice
  • 1/4 cup rice vinegar
  • 1/4 cup Nuoc Nam (Vietnamese fish sauce)
  • 1/4 cup water
  • 1 to 2 tablespoons finely shredded carrot

Directions

  • Combine the garlic, chile and sugar in a mortar and pound with a pestle to a fine paste. Add the lime juice, vinegar, fish sauce and water and stir to blend. Stir in the carrot and serve immediately or refrigerate, covered and in a non-reactive container, for up to 2 days.
