Pumpkin Cake

Ingredients

  • MIX TOGETHER:
  • 8 ounces egg substitute
  • 1 cup brown sugar
  • One-half cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup skim milk
  • 1 (28 ounce) can solid pumpkin
  • MIX TOGETHER:
  • 2 cups all
  • purpose flour
  • 2 cups oatmeal
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 3 tablespoons pumpkin pie spice
  • 1 cup chopped walnuts
  • 1 cup raisins

Directions

  • Preheat the oven to 350 degrees.
  • Fold the dry ingredients into liquid until well blended. Pour the mixture into 2 large or 4 small Bunt pans sprayed with non-stick spray. Bake in preheated oven at 350 degrees, 45 minutes for 4 small cakes or 60 minutes for 2 large cakes. Cool. Unmold on plates and sprinkle with powdered sugar before serving.
